  1. STEP 1

    STEP 1

How to make Mexican Blend Rice? Prepare the necessary ingredients. Choose the Mexican mixture especially carefully, because the taste of the finished dish will depend on its quality - pieces of vegetables should be whole, not frozen; mine includes corn, bell peppers, green beans, peas and carrots. If some components are missing, they can be added fresh to the pan. Although the selection of vegetables is a matter of taste.

  2. STEP 2

    STEP 2

First of all, rinse the rice thoroughly and boil it in a large amount of water (about 1:3, no less). Any type of rice is suitable for this dish - today I used round rice. Boil the rice until tender in salted water.

  3. STEP 3

    STEP 3

At the same time, set a frying pan with vegetable oil to heat up, and in the meantime chop a small peeled onion.

  4. STEP 4

    STEP 4

Saute the onions until golden brown, chop the peeled garlic. When the onion is ready, add the garlic to the pan and stir - it will immediately release its aroma. Do not let the garlic burn, otherwise the taste of the finished dish will be ruined.

  5. STEP 5

    STEP 5

Add the frozen Mexican mixture to the onion and garlic in the pan and mix all ingredients well.

  6. STEP 6

    STEP 6

Simmer the vegetables over medium heat for about 10 minutes. Be guided by your stove. We need the vegetables to cook. Try it periodically.

  7. STEP 7

    STEP 7

Season the stewed vegetable stew with salt.

  8. STEP 8

    STEP 8

Pepper it. I usually prefer to use freshly ground pepper, it's much more flavorful!

  9. STEP 9

    STEP 9

Meanwhile, the rice has probably already cooked, so drain the excess water in a colander. You can rinse the rice a little under running cold water - this will make it crumbly. Add boiled rice to the pan with the vegetables.

  10. STEP 10

    STEP 10

Stir the vegetables and heat them for another 1 minute - and a delicious dinner is ready, invite your household to the table!

  11. STEP 11

    STEP 11

If desired, sprinkle the dish with fresh chopped herbs already on the plate. Bon appetit!

I love vegetable and simple dishes. If you don’t have a Mexican mixture, try this option - pilaf with bell peppers and tomatoes.

Once upon a time, my mother often prepared this dish, but along with the vegetables there was also frozen rice. And then the Mexican mixture disappeared from stores and I didn’t remember about it. And then I saw a recipe for Rice with a Mexican mixture, pleasant memories surfaced) And preparing the dish is not at all difficult. I doubled the portion. Boil the rice in a large amount of water, then pour the contents of the pan into a sieve and rinse with cold water. This procedure actually makes the rice more crumbly. When fried, onions and garlic give such an appetizing aroma that you want to try this “vegetable pilaf” as soon as possible. It was my children who gave the name to the dish) The mixture was kept on the fire for about 20 minutes, first it was defrosted in a frying pan, and then stewed. I added rice, heated it up and it turned out to be a wonderful second course. The rice absorbed the oil and really began to resemble lean pilaf. I supplemented the dish with black pepper, curry and paprika. Very tasty and filling! Such a variety of vegetable flavors and vibrant colors. Thanks for the interesting Lenten dish.

The recipe is good and simple, just like I was looking for. For some reason everyone starts frying vegetables in a frying pan, then adding water and rice to it and cooking it together with the vegetables for 20-30 minutes. What will be left of the vegetables in 30 minutes... Tell me how you cook the rice. What is the water/rice ratio and how long does it take, at what heat? Whatever one may say, I always end up with porridge. Thank you

Everything is fine, only you do not stew the vegetables, but sauté them.
