Step-by-step preparation
Cooking time: 1 hr 30 mins
STEP 1
Prepare the ingredients.
STEP 2
Soak the pearl barley in water for a couple of hours.
STEP 3
Cut the sausage into small strips.
STEP 4
Peel the potatoes and cut them into strips, larger than the other ingredients.
STEP 5
Finely chop the sorrel.
STEP 6
Cut the cucumbers into strips, like sausage, cut out the seeds (ideally)
STEP 7
Finely chop the onion and fry. Grate carrots and fry with onions.
STEP 8
Cook the pearl barley for 40 minutes, add potatoes and sausage, add tomato paste or ketchup, cook for another 20 minutes, 10 minutes before readiness add everything else.

I came across the recipe for pickle with smoked sausage and barley when I was looking for something to cook with Krakow sausage. I was just running out of soup, so the recipe came in handy. Instead of pickled cucumbers, I took pickled cucumbers (four small pieces). My potatoes were not large, so I took five of them. I used frozen sorrel. I soaked the pearl barley for only 30 minutes instead of two hours. I cooked the soup in two liters of water. I poured a little cucumber pickle into the soup while cooking. The soup turned out to be moderately thick, very rich and tasty. I’ve never tried a combination of sorrel and pickles before, but it turns out they complement each other perfectly. Krakow sausage added a very appetizing taste to the soup. Honestly, I never thought that sausage soup could be so tasty. Thank you very much for the recipe!
