Raffaello cake with mascarpone

Step-by-step preparation
STEP 1
1. Peel the almonds. To do this, soak it for 15-20 minutes in hot water. Immediately peel and lightly toast in the oven. It is better to peel the almonds in advance so that they dry, and then put them in the oven when they are dry.
STEP 2
2. Melt white chocolate in the microwave or in a water bath. Let cool slightly.
STEP 3
3. Beat the Mascarpone. Separately, beat the cream with powdered sugar. Gently mix the cheese and cream.
STEP 4
Add white chocolate and ½ coconut flakes, stir until smooth. Do not beat vigorously, otherwise the mass will fall off and become liquid (especially in such heat!).
STEP 5
4. Assembling the cake. Spread 1/3 of the cream on the crust
STEP 6
top with 1/2 toasted almonds. Cover with the second cake layer, cream again, remaining almonds
STEP 7
and the third cake layer, which we generously cover with cream, coat the sides of the cake.
STEP 8
Sprinkle the cake with the remaining coconut. Decorate with pecan nuts.
