My family loves all kinds of greens very much, and by spring we especially feel its lack in the diet (as my husband puts it, “there is not enough organic matter on the table”). Therefore, when young nettles appear in early spring, I always prepare a salad from them several times. Usually, in addition to nettles, my salad consists of boiled potatoes, green onions and vegetable oil. But this time I decided to use a quick recipe for nettle salad with eggs. I didn’t have parsley, but I did have a bunch of green onions. Seasoned with rich sour cream. I advise you to wear gloves when interacting with nettle leaves; even young nettles are very prickly. After rinsing the nettles with cold water, I usually pour boiling water over them for a few minutes, and then put them in a colander to drain thoroughly. It turned out to be a very tasty salad!!! I made it today according to your recipe, just added a jar of saury and boiled rice. It turned out great! Nettle may well be an alternative to arugula in the summer.
