Pyanse - steamed pies, cabbage and meat

These Korean pies are made without oil! Try it! I was interested in the recipe precisely because the pies are made by steaming. I was wondering what they tasted like. I read on the Internet that this dish has Korean roots. I liked the combination of meat and fresh cabbage. You should try it, it's delicious. This is not like our dumplings, the dough is yeast.

Today I decided to cook pyanse at home - steamed pies, cabbage and meat. The technology for their preparation is similar to pygodi, which our family loves very much, so it was interesting to try pyangse))). I kneaded the dough according to the recipe, it turned out quite stiff, but soft and not sticky. It lay in the refrigerator from morning until lunch (about 4 hours). I also prepared the filling in the morning so that it had time to cool. For the filling, I finely chopped the cabbage, grated it with salt, and added chopped garlic. Fry the onion in vegetable oil until transparent, then add minced meat to it, mash it well with a fork so that it does not fry in large pieces, add ground black pepper, salt, coriander, and soy sauce. Fry, stirring, until the liquid evaporates. I used ground pork and by this time it was fully cooked. If using ground beef, it may take longer (add an additional two to three tablespoons of water and fry the ground beef with onions until it evaporates). I cooked the pyanse in a pressure cooker for about 40 minutes. It turned out very tasty! The dough is soft, rose well (although I rolled it out quite thinly), the minced meat is juicy, spicy, with a garlicky aroma. Thanks to the author for the recipe!

Alice, very interesting pies, I’ve never seen steamed yeast dough before! Is there any difference between those baked in the oven and steamed, except for the golden crust??

Yes, there is a difference. Firstly, they don’t have this golden crust, and secondly, they are somewhat similar to dumplings, but more tender. I also saw this recipe for the first time and was very interested. I liked it, especially when the pies cooled, the taste became even more interesting. I added meat for my husband, and made cabbage with fish for myself. I also liked it with fish.

It’s reminiscent of manti - steamed in a double boiler, but the minced meat is interesting, the cabbage with garlic is not fried, but mixed with the minced meat and already steamed until cooked, very interesting, and the dough turns out fluffy, like steamed dumplings, right? Alice, you showed an excellent version of dietary and very tasty pies, I can imagine how delicious the minced meat is - juicy, tender, not greasy, and the dough is light)))

Shurochka, the dough is in no way similar to manti, it is more loose, fluffy, it’s yeast dough, it also has starch added, it’s very tender. And the minced meat has an unusual taste. Cabbage is not fried, it gives its own juice and taste. All together great. When they were hot, I didn’t quite understand the taste, but when these pies cooled, the minced meat acquired a rich taste. In short, what I will tell you is, don’t bite when it’s hot, be patient, let it cool and then...

And then we will catch the real pleasure of taste)))) Of course, Alice, everything hot only spoils understanding the truth and conveying to our taste sensations, which does not apply to tea, I like to drink tea with steam and it is very hot)))
