Pumpkin soup with turmeric
Step-by-step preparation
STEP 1
Prepare all the necessary ingredients for the pumpkin turmeric soup. Remove the skin from the pumpkin and cut it into cubes. For this recipe, it is better to use unsweetened varieties of pumpkin.
STEP 2
Cut the onion into random pieces.
STEP 3
Place the onion in the pan along with the pumpkin. Fill with water up to the level of the vegetables. It is better not to add a lot of water so that the puree soup does not turn out liquid. Bring to a boil and cook under the lid until tender, stirring occasionally. When the vegetables are well cooked, add a little turmeric and salt to taste.
STEP 4
Turn off the stove and blend everything with an immersion blender until smooth.
STEP 5
Now add cream and butter to the puree. The butter will give the soup a pleasant creamy taste. Beat everything well again with a blender.
