Pumpkin soup with ginger and garlic

An ideal soup for fasting or dieting, although you can also serve it to your husband! Today I bring to your attention an interesting culinary recipe that was given to me by a wonderful person and a great cook. Honestly, very good. This is my good friend and acquaintance. Accordingly, food from such a person cannot be bad. As they say, it’s been tested, we know!

Annelly, you are a culinary genius. Today I was thinking about making something delicious. And here you are with this recipe. And if you don’t like the spicy taste of ginger, which is quite specific, you can try pumpkin puree soup with cream

I liked the soup and will make it again, but with some adjustments regarding ginger. Maybe the ginger I came across was very bad, but in my opinion the indicated amount is too much: the soup turned out to be bitter and spicy. Next time I’ll take just a little bit to add a light ginger flavor, but no more, that’s the first thing. Secondly, in my opinion, it is better not to chop the ginger, but to grate it on a fine grater, because... During baking, it does not soften and the blender does not grind such small pieces, as a result of which there is some dissonance between the delicate consistency of the soup and the crunchy pieces of ginger. Otherwise everything is fine. Thanks for the recipe!
