I baked delicious and aromatic pumpkin muffins for tea. Instead of walnuts, I added peanut butter, and took the remaining ingredients according to the recipe, in the quantities suggested by the author. My baking time was a little longer and took 25 minutes. The muffins turned out very tender, the sponge cake was moderately sweet with a subtle cinnamon-walnut-pumpkin aroma!

In the fall and winter I make a lot of pumpkin dishes, both fresh and frozen. I liked this recipe for its simplicity. I did everything according to the recipe, first baked fresh pumpkin, then pureed it in a blender. Instead of nuts, I added frozen pitted cherries; I wanted blackcurrants, but I didn’t bring them from the village on time. It’s also very tasty with cherries; they add a pleasant sourness to the sweet dough. Overall, they turned out to be excellent muffins with a crispy crust and a tender-moist center, but for some reason the muffins rose during baking, maybe because the soda was not quenched, and the frozen cherries gave acid already during baking? Next time I'll try to extinguish the soda. Sharing:
