Potatoes with sauerkraut stewed in a frying pan

STEP 1

How to stew potatoes with sauerkraut in a frying pan? Prepare all the products on the list. If you like to make sauerkraut at home, then you're in luck; you don't need to go to the supermarket. The time for stewing depends on the type of potato you choose. Use any vegetable oil with a high smoke point. Vegetable, meat or mushroom broth can easily replace water in the recipe.
STEP 2

I bought sauerkraut at the supermarket and, as it turned out, it was very sour. I filled it with cold water and left it for 10 minutes. If the cabbage you choose is not sour and tastes good, then you don’t need to soak it, but you can start cooking right away.
STEP 3

Now take the onion. Remove the husks. Rinse with cold water and be sure to dry with a paper towel. If this is not done, when it gets into hot oil, splashes will scatter throughout the kitchen.
STEP 4

Pour oil into the pan. Let it warm up well. To determine if the oil in the pan is hot enough, dip a spatula into it. If bubbles form around the spatula, you are ready to fry. Add chopped onion. Fry, stirring, over high heat for 2-3 minutes until slightly translucent.
STEP 5

If you soaked sauerkraut, rinse it again and squeeze out excess liquid well. If you are satisfied with the taste of cabbage, squeeze it well from the brine. Transfer the cabbage to the pan with the onions. Stir. Reduce heat and simmer for 10-15 minutes until the cabbage sticks become softer. For me, about 10 minutes was enough for the cabbage to crunch a little. Times are approximate. Focus on your taste and technique.
STEP 6

Peel the potato tubers. Rinse well in running cold water. Cut into large slices or as desired. The stewing time depends on the size of the chopped potatoes.
STEP 7

Place the chopped potatoes separately in a deep frying pan. Carefully pour in the boiling water. If desired, you can use vegetable, mushroom or meat broth instead of water. Cover with a lid and simmer from the moment of boiling for about 10 minutes over low heat.
STEP 8

Add sauerkraut on top of the potatoes. Season with ground black pepper. If you love turmeric, you can add a little to make the finished dish more vibrant. Cover with a lid. Simmer over moderate heat for about 10 minutes.
STEP 9

Stir. If all the liquid has boiled away and the potatoes are not ready yet, add a little boiling water and simmer until all the ingredients are ready. It took me another 15 minutes for the potato wedges to become soft.

Stewed potatoes and cabbage are ready.
