STEP 1
How to cook potato soup with beans? Prepare all ingredients. Vegetable broth can be replaced with plain water. Beans can be used either red or white. I have a mixture of beans. You can also use canned beans, this will significantly reduce the cooking time. In this case, add it to the soup along with the carrots (step 10) so that they do not boil and lose their shape.
STEP 2
The night before, rinse the beans, sort them, cover with cold water and leave to soak overnight.
STEP 3
Peel, wash and cut the potatoes into medium cubes. Peel the onion.
STEP 4
Peel the carrots, wash and cut into small pieces. You can also grate carrots.
STEP 5
Drain the swollen beans and rinse again.
STEP 6
Pour vegetable broth or water into the pan, add beans and a whole onion. The article on saucepans, link at the end of the recipe, will help you choose the ideal saucepan for soup. You can make frying carrots with finely chopped onions (step 9). This makes the soup thicker.
STEP 7
Place the pan over medium heat, bring the broth to a boil and simmer for about 40 minutes until the beans are tender.
STEP 8
Place the potatoes in the pan and cook together with the beans for about 10 minutes.

STEP 10
Transfer the fried carrots to the pan and stir.
STEP 11
Season the soup with salt and pepper to taste and cook for about 5 minutes.
STEP 12
Finally, remove the onion from the soup. Cover the pan with a lid and let the soup brew for 10-15 minutes, then serve. Bon appetit!
