Pork head brawn

Step-by-step preparation
STEP 1
How to make brawn from a pig's head at home? Prepare everything you need. Chop the pork head into pieces, rinse well under running water and soak overnight. At this stage my husband helped me.

In the morning, rinse the parts of the pork head well again in several waters and peel
STEP 3
Place the pieces in a saucepan of a suitable size, cover with cold water and cook. Cook the brawn after boiling for 6 hours over medium heat. You will learn how to choose a suitable pan for cooking by reading an article on this topic. There is a link at the end of this recipe.
STEP 4
During cooking, foam will form on the surface; it must be removed with a slotted spoon or a regular spoon.
STEP 5
Peel the onion and rinse. Wash the carrots in running water and remove the skin. 2-3 hours before the meat is ready, add onions, carrots, bay leaves, peppercorns and allspice to the pan. You can add any other spices if you wish. I use, let’s say, a “classic” set of spices for brawn.
STEP 6
Add some salt. You need a lot of salt - we need to add a little salt so that the boiled meat is not bland
STEP 7
After 6 hours the meat is ready!
STEP 8
Remove the boiled head pieces from the broth and leave to cool. You can add boiled chicken to the broth and you will get a wonderful low-fat jellied meat, or you can, for example, cook rich borscht
STEP 9
Separate the meat from the bones.

Separate the meat and lard from the skin and cut into medium pieces. The photo shows pieces of boiled meat, lard and pork ear

Peel the garlic.
STEP 12
Squeeze the garlic through a press directly into the meat.
STEP 13
Sprinkle with ground black pepper and stir.
STEP 14
Place the resulting meat mass on a baking sheet and bake in the oven at 200 degrees for about 15 minutes. The times are approximate, check your oven.
STEP 15
After 15 minutes, remove the meat and let it cool slightly
STEP 16
To give the brawn its shape, I will use a cut-off plastic bottle, and so that it can be easily taken out, I will put the bag inside. You can take a milk carton or a special round ham maker - whatever is convenient for you.
STEP 17
Press the meat mass well into the chosen shape.
STEP 18
And put it under pressure overnight.
STEP 19
In the morning, remove the brawn from the mold in which you made it. You can try the finished brawn in a bottle, or you can wait for your favorite friends to come! Bon appetit!
