Podcherevka roll baked in the oven
Pork roll with garlic, baked in the oven - simply delicious! Flavorful, tasty meat is an excellent substitute for sausages! If the undercut is too fatty, use more hot seasonings and sauces.

Step-by-step preparation
Cooking time: 2 hr
STEP 1
Prepare underlings, salt, garlic, a ready-made mixture for salting lard and bacon, or dry spices according to the list.
STEP 2
Rub the undercuts with salt.
STEP 3
Rub crushed garlic into the meat.
STEP 4
Rub with dry spice mixture.
STEP 5
Wrap the undercut with a roll and tie it with twine.
STEP 6
Wrap loosely in foil.
STEP 7
Place in an oven preheated to 180 degrees for 1 hour. Turn off the oven and let cool without removing the roll. If you want a golden brown crust, unwrap it and turn on the convection or grill.
STEP 8
Serve the undercut roll as an appetizer with pickled cucumber, horseradish, mustard, and make sandwiches. Bon appetit!

I wanted to try a roll of undercut baked in the oven. The thickness of the piece of skin with lard and meat was quite large, so I did not cut off the layer of lard completely. Rubbed on all sides with aromatic garlic, salt, paprika and curry. I rolled the roll starting from a thin layer and ending with the skin. I tied the roll with twine, but I didn’t have the strength to make it tight). I baked it in foil for 1.5 hours, periodically piercing the roll with a knife to determine readiness. After cooling, I wiped the roll from any fat that had appeared on the skin and removed the rope. The roll is well cut, the skin is elastic, and the lard and meat are soft. The appetizing smell of garlic and spices goes very well with this appetizer, especially with black bread! We liked. Thank you!
