Pink salmon on the grill

STEP 1
How to make pink salmon on a grill grill? First of all, prepare the fish. It is better to use a small carcass, since the pink salmon will be baked whole. I used frozen fish without a head, having previously defrosted it. Read about all the intricacies of proper defrosting in the article at the link at the end of the recipe. Cut off the tail and, if necessary, the head of the fish. Remove scales from the carcass and rinse well under running water.
STEP 2
How to marinate pink salmon for grilling? Prepare spices and herbs. I used ground red pepper, salt, dried rosemary and basil, and coarse red chili pepper. From the greens I took fresh thyme and a sprig of rosemary. You can use your favorite spices. Wash the lemon and cut it into two parts.
STEP 3
Pour olive oil into a small container; it is more aromatic than regular sunflower oil. If you don’t have one on hand, the marinade can be made from any vegetable oil. Add seasonings and salt to the oil.
STEP 4
Mix everything thoroughly. The marinade for pink salmon on the grill is ready.
STEP 5
Using a sharp knife, make small cuts on both sides of the carcass, as in the photo. This is necessary so that the marinade is better and faster absorbed into the tender meat.
STEP 6
Coat pink salmon well on both sides with aromatic oil. This can be done with your hands or with a silicone brush.

Don't forget to coat the cuts.

Also coat the inside of the fish with marinade.
STEP 9
From half a lemon, squeeze the juice first onto one side of the pink salmon, then turn the carcass over and do the same on the other side.
STEP 10
Tear a couple of thyme sprigs and 2-3 rosemary petals into small pieces with your hands. Cut a couple of slices from the squeezed lemon.
STEP 11
Place the lemon and herbs into the inside of the fish.
STEP 12
Sprinkle freshly ground black or allspice on top of the pink salmon. You can also add a little red pepper. Leave the fish to marinate for 15-20 minutes. Meanwhile, light the grill.
STEP 13
Wash the grill on which the fish will be cooked well, dry it and grease it with vegetable oil. This is necessary so that pink salmon does not stick to the metal and comes off well after cooking. Place the pink salmon on the grill.
STEP 14
When the wood burns out and coals remain, send the fish to the grill. Fry the fish on one side until golden brown, then turn it over to the other side and cook again until the skin is browned. The time depends on the degree of heat in the grill.
STEP 15
Next, turn the pink salmon over again and keep it on the coals for about 3-5 minutes. Turn the fish over again and do the same. In total, it took me about 20-30 minutes to cook fish weighing 700 grams. Attention, if you hold the fish over the heat, it may turn out dry!
STEP 16
Remove the finished fish from the heat. Place the pink salmon on a tray or plate and sprinkle the juice from the other half of the lemon on top.
STEP 17
Garnish the fish with a sprig of rosemary and basil, a slice of lemon, sprinkle with allspice and serve.
