    Rinse the fillet pieces and dry very well with paper towels. It is important to do this carefully, as excess moisture will prevent the fish from frying. Then salt the pieces on both sides, but sprinkle with spices only on the side without skin.

    Heat a frying pan over medium heat, preferably with a non-stick coating. Pour vegetable oil on it for frying, and then put a piece of butter. Vegetable oil has a higher combustion temperature and will not allow butter to burn. And the cream will add a pleasant aroma to the fish. That's why I use two types of oil. Wait for the butter to melt. Place the fillet pieces, skin side down, into the heated oil.

    Fry the fillet for about 5 minutes on one side. You can focus on its side - the fish will change color until the middle of the piece. Then turn the pieces over to the other side. Fry them for about 5 minutes more until done.

I cook pink salmon fillet in a frying pan quite often. I usually dredge the fish in flour and then fry it. In this recipe, the fish is fried without breading, so I decided to experiment. But my pink salmon burned a little on the frying pan and I couldn’t turn it over nicely, even though I heated the frying pan with a mixture of vegetable and butter well. The fish itself turned out very tender and tasty. Still, I prefer to cook breaded fillet.
