    Remove any remaining scales from the pike, if any. Wash the head and tail and place in a saucepan. Fill with cold water, add a few peas of black or allspice, as well as a bay leaf.     Bring to a boil over high heat. Remove the resulting white foam with a spoon. Reduce heat to low and simmer the broth covered for 30-45 minutes. Open the lid slightly to allow steam to escape.

I was treated to fish, a huge pike! I prepared a couple of dishes from the fillet and what was left was the head and backbone. I decided to cook fish soup from the head of a pike and at the same time added spinal bones for fat. Fish soup is cooked easily and without any problems. After boiling, I cooked the head and bones along with the potatoes for 30 minutes. Then I took out the fish, and threw onions and carrots into the soup, and later dill and green onions. I would also like to add tomatoes, but I didn’t have any on hand) I served the fish head and bones separately, we are more used to it that way. The soup turned out rich, even its color was yellow-golden. Very tasty and yet light.
