Pike head ear
Step-by-step preparation
STEP 1
How to make fish soup from a pike head at home? Prepare all the necessary products. For cooking, I used the head and tail of the fish. If you have frozen fish, then defrost it first until the head and tail are completely melted. Read about all the intricacies of proper defrosting in a separate article, link at the end of the recipe. Be sure to remove the gills from the head, otherwise the broth will taste bitter.
STEP 2
Remove any remaining scales from the pike, if any. Wash the head and tail and place in a saucepan. Fill with cold water, add a few peas of black or allspice, as well as a bay leaf. Place the pan on the stove. The article on saucepans, link at the end of the recipe, will help you choose the ideal pan.
STEP 3
Bring to a boil over high heat. Remove the resulting white foam with a spoon. Reduce heat to low and simmer the broth covered for 30-45 minutes. Open the lid slightly to allow steam to escape.
STEP 4
At this time, prepare the vegetables. Peel and wash potatoes, onions and carrots.
STEP 5
Cut the potatoes into small cubes or cubes. Chop the onion into half rings or squares, and grate the carrots or cut into thin slices.
STEP 6
When the head and tail are ready, remove them from the pan to a separate plate. Add chopped vegetables to the broth. Bring to a boil again over high heat. Salt everything to taste. Next, reduce the flame to moderate and cook for 5-10 minutes. Rinse the millet in hot water first so that it does not become bitter. The article at the link at the end of the recipe will help you with choosing millet.
STEP 7
Add millet and cook until all ingredients are cooked. This will take you another 10 minutes. If you use a different grain, then adjust its quantity to taste.
STEP 8
Cut the slightly cooled head and tail. Separate the meat and discard the bones.
STEP 9
When the fish soup is ready, add pike meat to the pan. Rinse the greens and chop finely. Parsley or dill are great. I really like using a young dill umbrella for soups like this. Let it simmer for a few more seconds.
STEP 10
Done, ready to serve!
