    How to bake pike cutlets in the oven? Prepare the necessary ingredients. If you have a whole fish, gut it, remove the scales, separate the fillets and remove the bones. The weight of the fillet after processing is 450 g. Pass the fish through a meat grinder or beat in a blender. I had ready-made minced pike fish. If you use frozen fish, defrost it first. Melt the butter first. You can also add onions to the minced meat.

    Cut the crusts off the slices of white bread. Pour milk over the bread and leave for 5-7 minutes.

    Place minced fish in a bowl. Squeeze the bread from the milk and add to the minced meat. Beat the egg, pour in the melted butter, add salt and pepper. If you are going to add onion to the minced meat, you can chop it finely or chop it together with pieces of fish. Onions chopped with a knife can be added to the minced meat raw or after frying in vegetable oil until light golden brown.

    Knead the minced meat thoroughly with your hands. If the minced meat turns out to be too liquid and watery (and this often happens when grinding fish in a blender after defrosting, because it still contains more moisture than fresh), you can add 1-2 tbsp. l. semolina and leave for 20 minutes to swell. Place the finished minced meat in the refrigerator for 20 minutes.

    From the chilled minced meat, with wet hands, form medium-sized oval cutlets and roll in breading on all sides. If you don’t have breadcrumbs, you can make them yourself: cut a few slices of the loaf into cubes and dry in the oven until golden brown. Then put the crackers in a bag and roll them over with a rolling pin, or grind them in a blender.

    Place the cutlets on a baking sheet lined with parchment and greased with vegetable oil. Also brush the cutlets with vegetable oil on top. Bake the pike cutlets in an oven preheated to 180°C for 30-35 minutes until golden brown. The exact baking time depends on the characteristics of your oven. Bon appetit!

I just cooked pike cutlets in the oven for dinner. How delicious they turned out! My pike was big and fresh. I always remove the skin before rolling the minced meat. Without it, the minced meat and the cutlets themselves turn out white and tender. I took 200 g of bun, cut off the crusts and soaked it in water. I immediately took it out and squeezed it out, because the bread was fresh. If it’s stale, then, of course, you need to hold it longer. At first I was confused by the presence of butter in the composition, but I guessed that this would make the cutlets more tender. I didn't add any garlic, I didn't want to overpower the taste. Moreover, the pike had no specific smell. My daughter asked me not to roll the cutlets in breadcrumbs, she doesn’t like the crispy crust) So I just formed the cutlets, wetting my hands with water. Bake for exactly 35 minutes. The cutlets turned out juicy and not dry. The taste is creamy, delicate, pleasant, it doesn’t even smell like fish! Excellent dietary cutlets, delicious! Served with vegetable salad on the side.
