Hotter water will kill yeast, which is a living organism. And in cold water they simply won’t wake up. Put a couple of tablespoons of flour into the water and stir. Pour in the yeast and stir with a whisk.

    Cover the bowl with a towel and leave for 15-20 minutes. During this time, a foam cap should appear on the surface of the water - this means that the yeast is active, it has woken up and is ready to work. If this does not happen, then you need to use other yeast; with this the dough will not rise.

    Sift the flour through a sieve into another bowl. Sifting aerates the flour, which will make your baked goods softer and fluffier. Don't skip this step, especially when making yeast dough.

I prepared pies with rice and eggs in the oven for tea. I used the highest grade flour for the dough, egg category C1. I added 350 grams of flour; on the author’s advice, I didn’t add more. The dough remained a little sticky, but this did not create any problems during kneading. For the filling I took round grain rice. I divided the risen dough into 12 parts. I started putting the filling into the pies quite generously, so I had enough for 7 pies. I filled the five remaining ones with raspberries, sugar and starch. I baked the pies at 180 degrees for 25 minutes: 10 on the middle level of the oven and 15 on the top one. The pies turned out rosy, fluffy, and soft. The whole family loved these pies.
