Pies with rice and egg in the oven
Step-by-step preparation
STEP 1
How to bake rice and egg pies in the oven? Prepare all the necessary ingredients. This quantity will yield approximately 12 small pies.
STEP 2
How to knead the dough for delicious yeast pies? First you need to activate the yeast. Take a bowl, pour warm water into it, temperature about 37-39 degrees. Hotter water will kill yeast, which is a living organism. And in cold water they simply won’t wake up. Put a couple of tablespoons of flour into the water and stir. Pour in the yeast and stir with a whisk.
STEP 3
Cover the bowl with a towel and leave for 15-20 minutes. During this time, a foam cap should appear on the surface of the water - this means that the yeast is active, it has woken up and is ready to work. If this does not happen, then you need to use other yeast; with this the dough will not rise.
STEP 4
Sift the flour through a sieve into another bowl. Sifting aerates the flour, which will make your baked goods softer and fluffier. Don't skip this step, especially when making yeast dough.
STEP 5
Add salt and sugar to the flour, mix.
STEP 6
In a separate bowl, lightly beat the egg with a fork and pour it into the flour. Pour vegetable oil there. Before using, wash the egg in warm water and soda, as there may be harmful bacteria on its surface.

Add the yeast dough last. Knead the dough. First, just stir it with a spoon. When it becomes difficult to stir, use your hand. It's convenient to do this right in the bowl. Don't add more flour - the dough will be sticky, but that's how it should be. It will remain soft in the finished product. Better wear a glove. Or knead the dough with a mixer with special attachments.
STEP 8
When the dough is smooth and uniform, gather it into a ball and place it in a clean bowl. Cover the bowl with a towel or cling film and place the dough in a warm place to rise for one and a half to two hours. Since flour from different manufacturers has different properties, you may need a little less or more.
STEP 9
How to make filling for pies? Boil the eggs in advance. It is better to use short-grain rice, not steamed.
STEP 10
Rinse the rice well in several waters until the water runs clear. Next, pour cold water over the rice in a ratio of 1:1.5 (for one part of rice, one and a half portions of water) and cook over high heat. As soon as the water boils, reduce the heat to low. Cook the rice for 15 minutes with the lid closed. Then turn off the fire. Do not open the lid of the pan! Leave the rice to stand for another 15 minutes.
STEP 11
After 15 minutes, add butter to the cooked warm rice. Stir.
STEP 12
Peel the hard-boiled eggs and chop them with a knife.
STEP 13
Add eggs to rice. Add salt to taste. Stir. The filling is ready.
STEP 14
The dough should double in size.
STEP 15
Punch it down and assemble it into a ball again.
STEP 16
Turn the dough out onto a floured work surface. Mix it a little.
STEP 17
Roll the dough into a sausage and divide into 12 equal parts.
STEP 18
Round each part. To do this, gather the edges to the center with a knot, turn it seam side down and roll the workpiece, forming a ball.
STEP 19
Roll each ball into a circle, about 5 mm thick. Place a tablespoon of filling in the center.
STEP 20
Pinch the edges of the pie. Fold the seam into a shape if desired.
STEP 21
Form all the pies in this way. Place them on a baking tray lined with baking paper. I placed the pies too close to each other. It is better to divide their quantity into two baking sheets and leave a larger distance between them - the pies will grow a lot.
STEP 22
Cover the baking sheet with a towel and leave the pies to rise for 15-20 minutes.
STEP 23
Preheat the oven to 180°C, top-bottom mode. Bake the pies for about 25 minutes until golden brown. Cool hot pies on a wire rack. The times are approximate, be guided by the operating characteristics of your oven.
