Pie with jam from Gerbeau dough

The famous pie in a simplified version for home tea drinking). A simpler version of Gerbeau pie. No frosting or nuts. I really like the dough of this wonderful pastry chef. He is easy and interesting to work with. But you don’t always have two bars of dark chocolate at home for icing, and you won’t always find anyone willing to crack nuts either. At one of these moments, I decided to make a pie from this dough simply with jam, which was on hand.

    Products for preparing the dough: milk, flour, sugar, margarine (or butter), egg, dry yeast and baking powder, vanilla sugar.

    Pour 10 grams into 0.5 cups of warm milk (not hot!). dry yeast, 1 tbsp. l. sugar and 2 tbsp. flour. Stir, cover with a cloth (I use a regular table napkin) and set aside for 15 minutes for the yeast to rise. It is better to do this immediately in the bowl in which you will knead the dough. I took a 3 liter bowl.

    Melt 200 grams of margarine or butter. Let it cool a little.

    The yeast has arrived.

    In a bowl with yeast, add the egg, the remaining sugar (0.5 tbsp without 1 tbsp, which we poured into the milk with yeast), vanilla sugar and melted cooled margarine. Mix.

    Sift 500 gr. flour along with 2 tsp. baking powder. Add to the dough and mix well until smooth. The dough turns out soft, elastic, very pleasant. Place on the table (on a board, silicone mat), cover with a bowl and leave for 30 minutes.

    While the dough is rising, prepare the streusel. To do this, grind 40 grams in a bowl with a fork. soft butter with 1/2 tbsp sugar and 1/4 tsp. vanilla sugar.

    Add 1/2 cup of flour here and mix.

    We roll it into a “sausage”, wrap it in cling film and put it in the freezer.

    Divide the dough into 4 equal parts. It is advisable to use scales. Each piece weighed ~230g.

    We begin to “assemble” the pie. For the filling I had cherry jam. You can take any, as well as jam or thick preserves.

    Roll out each dough ball into a 20x30 cm layer.

    Transfer to a baking tray lined with baking paper or a silicone mat. Coat with jam.

    Roll out the second layer of dough. Place it on top of the first one. Coat with jam. We do this with all the pieces of dough. The layers of dough should be the same size. There is no need to fasten them together. Just lay one on top of the other, covering each one with filling.

    Do not coat the top layer of dough with jam yet. Prick with a fork to prevent the dough from puffing up during baking. Leave the pie in a warm place for 30 minutes.

    Sometimes it is difficult to find a warm place in the apartment to raise the cake. I proceed as follows. I preheat the oven to 200 degrees. Then I turn off the gas. I open the door for half a minute. I put the baking sheet with the pie in the switched off oven. I close the door. And through the window in the oven I watch the process. That's how it rose for me.

    Cover the top of the pie with jam.

    Take out the frozen dough “sausage” for the streusel. Grate on a coarse grater.

    Sprinkle streusel crumbs over the entire top of the pie. Place in a preheated oven. Bake at t180 degrees. 25-30 minutes until golden brown.

    Let the pie cool completely. Then trim the edges evenly to make a rectangle.

    Cut the pie into portions. I get 20 of them.

Yesterday I made the dough overnight. I baked in the morning. It turned out very tasty. Good, manageable dough. I had homemade plum jam. It turned out wonderful. Thanks for the good recipe! Then I’ll try your version with dried apricots, nuts and chocolate. I'll post what happened.

The recipe calls for 1 tablespoon of vanilla sugar for the dough. when and where to add. I can’t understand, because for the streusel separately 0.25 tsp
