  1. STEP 1

    STEP 1

Prepare all the necessary products for pickling zucchini for the winter in jars. Take young, thin, small zucchini. Such that they do not need to be peeled and have small young seeds. You can use both white-fruited zucchini and zucchini. Coarse table salt is preferable - preparations are best made using just such salt.

  2. STEP 2

    STEP 2

Wash the jars and sterilize them in any convenient way. I pour some water into the jars and put them in the microwave for 5-7 minutes. But you can also sterilize them in the oven at 100 degrees for 15-20 minutes. Or put a spoon in each jar to prevent it from bursting and pour boiling water over it, leave for 7-10 minutes, then drain the water. Boil the lids for about 5 minutes.

  3. STEP 3

    STEP 3

Rinse all herbs well. Place umbrellas or dill in each jar. It will give the zucchini an extraordinary aroma!

  4. STEP 4

    STEP 4

A few allspice peas or just peppercorns.

  5. STEP 5

    STEP 5

    Bay leaf.

  6. STEP 6

    STEP 6

And a clove of garlic. However, adjust the amount of garlic to your taste. You can also add some other herbs or seasonings for flavor: cherry leaf, currant leaf, oak leaf, horseradish leaf, tarragon and others.

  7. STEP 7

    STEP 7

You don't have to peel young zucchini, but wash them well. Cut into circles no more than 1 cm thick. If you have a thick zucchini or you see fairly large seeds in the zucchini, it is better to cut the vegetable into half circles.

  8. STEP 8

    STEP 8

Place zucchini mugs in a jar.

  9. STEP 9

    STEP 9

Boil the brine at the rate of adding 2 tablespoons of salt to 1 liter of water.

  10. STEP 10

    STEP 10

    Pour brine over the zucchini.

  11. STEP 11

    STEP 11

Cover with a lid and leave at room temperature for two days. During this time, a special acid will appear in the jar, thanks to which the workpiece will be perfectly stored.

  12. STEP 12

    STEP 12

Pour the brine into a saucepan.

  13. STEP 13

    STEP 13

    Bring to a boil.

  14. STEP 14

    STEP 14

    And pour the zucchini again.

  15. STEP 15

    STEP 15

Close the lids tightly or roll up the jars. You can also use a nylon cover. Sterilization is not required for this preparation.

  16. STEP 16

    STEP 16

    Bon appetit!

How delicious the zucchini turned out! I’ve never salted zucchini in jars for the winter before. And in vain. They turned out no worse than cucumbers, and they are even more convenient to eat because they are cut into slices. Great recipe, thank you so much!!!
