I’ve never cooked pickled pears for the winter without sterilization before. But, having seen a review that said that men liked them as a snack, I wanted to make them for my other half. I took one kilogram of pears for this. I removed their cores and tails and cut each into 4 pieces. I did not blanch the pears. I thought that the hot marinade would act almost the same as blanching, and they would definitely be ready. Therefore, I put the chopped pears in sterilized jars (I had 2 jars of 0.5 l each), poured boiling water over them, and after a few minutes I poured this water into a saucepan for preparing the marinade, added 2 bay leaves and peppercorns (cooked without cloves and ginger). I took one teaspoon each of salt and citric acid for the marinade. I decided to limit the amount of sugar to 6 tablespoons. I tried the marinade, it turned out rich and very tasty! Having brought it to a boil, she poured the pears in the jars to the top and closed the lids. I kept it under a warm blanket until the morning. I think we’ll open another jar in November-December to try this original snack! Thank you very much for the recipe!
