    How to make amber jam from pear slices for the winter? Prepare all the necessary products. To make jam, I advise you not to take too ripe pears - they will boil and you will end up with porridge. Take dense and elastic fruits, hard to the touch. I took regular white sugar. But now there are many different types of sugar: you can take coconut and it will give the jam a light coconut aroma, or cane sugar - it will give a caramel shade.

    Wash the pears well - it is best to use a special fruit cleaner and a brush for this procedure. Cut off the stalks, remove the seed pod and cut into slices about 3-4 mm thick.

    Add sugar and leave for several hours to allow the pear to release juice. Do not add water to the jam under any circumstances: there should only be fruit and sugar.

At this stage, lovers of spicy jam can add their favorite spices: vanilla sugar or vanilla, cinnamon, ground ginger, cloves, and nutmeg are perfect. You can also take vanilla pods, cinnamon sticks, clove buds (only then do not forget to remove them from the finished jam), ground spices are also quite suitable - one pinch of each seasoning will be enough for the aroma.

    Bring the jam to a boil and simmer over low heat for 40 minutes, constantly skimming off any foam that forms on the surface.

The pear yielded a good harvest this year. I usually dry it and make compotes, but today I decided to make jam for the winter according to the recipe for amber jam from pears in slices. I took dense, elastic pears, cut them into slices 3-4 mm wide, covered them with sugar and left them so that the pear gave juice. While going about her business, she looked into the bucket with the pear, was it time to make jam? Then I decided that it wouldn’t be a big problem if I left the pear for 3-4 hours. Four hours later, looking into the bucket, I saw that the slices were completely covered with the secreted juice, and they themselves had decreased in size, as if they had shrunk. There was more than enough juice in the bucket. I cooked the jam on low heat for 40 minutes without adding water. During cooking, it acquired a reddish tint, and the slices became translucent, amber in color. I tasted the jam - mmm... wonderful! Usually, when making jam, I use much less sugar than 1/1. But this time I did everything according to the recipe and I got transparent slices! This only happens if you add a lot of sugar, but for the sake of such beauty, you can make sweeter jam) I cooked it in two batches, the first time in the evening, and in the morning I finished cooking it and rolled it up. Pear jam is so fragrant and delicious! And how beautiful! I love him very much)
