If you don’t know when the cucumbers were picked and what degree of freshness they are, then soak them in ice water for several hours first. My carrots are also fresh and young.     Sterilize the jars in any convenient way. I put jars of water in the microwave for 5-7 minutes. But it is quite possible to sterilize them over steam, or in the oven at 100 degrees for 15 minutes, or put a spoon in each jar so that the jar does not burst, pour boiling water and leave for 10 minutes, then drain the water.     Peel the garlic and put 1-2 cloves in each jar.

    Also put allspice and bay leaves in a jar. You can use other herbs or seasonings: dill umbrellas, currant leaves, cherry leaves, oak leaves, horseradish, chili pepper rings, tarragon and others to your taste are suitable for pickling.

    Wash the cucumbers well; you can cut off the ends, but I prefer to cut them off just before serving. Place the cucumbers tightly in the jar.

    Peel the carrots, cut into circles about 5 mm thick and also add to the jar.

    Boil water and pour over cucumbers. Cover the jar with lids and leave for 15 minutes.

    Pour the water back into the pan, add salt, sugar and vinegar. Based on the calculation that for 1 liter of water take 2 tablespoons of salt and sugar and 1 tablespoon of vinegar. Vinegar 6-9%. If you have vinegar essence, dilute it in a ratio of 1 to 8. Boil the marinade.

    Pour the boiling marinade back into the jar and close tightly with screw caps or roll up using a machine. Sterilization is not required for such preservation; the workpiece is perfectly stored in room conditions.
