Grind the softened butter with sugar and yolk.

Place our future petit fours on a greased baking sheet. Sprinkle some chopped nuts into the middle of each cavity.

We bake “cheesecakes” in a preheated oven at 200 degrees. oven for about 10 minutes until golden brown.

While the baked goods are cooling, make the protein cream. Beat the egg whites with a mixer, adding sugar in small portions. For greater stability of the protein foam, you can add a few grains of citric acid. At the end of beating, add vanillin. Beat until a thick, stable mass.
STEP 10

Place cream from a syringe in the middle of each cheesecake.
STEP 11

Place in a heated room at 170 degrees. until lightly browned.
