Pea soup with smoked ribs

Ingredients
Step-by-step preparation
STEP 1
You will need dry peas, which need to be soaked overnight so that they cook faster. Pour water over smoked pork ribs and cook over low heat.
STEP 2
Cut the onion into small cubes, and chop the carrots with a knife or grate on a fine grater.
STEP 3
Sauté both onions and carrots in a frying pan in oil for a while until the onions are golden brown.
STEP 4
After the ribs have cooked for about half an hour, add peas and fried onions and carrots. Peel the potatoes and cut them into cubes for soup. Add salt and pepper to taste.
STEP 5
When the potatoes are cooked, puree all the vegetables in the soup using a blender. Remove the meat from the bones and chop. Then cook the soup for another five minutes and remove from heat.
STEP 6
Serve by sprinkling herbs on top and adding croutons or croutons.
STEP 7
