    How to make jam from heavenly apples with a tail? Prepare all the necessary products. For this jam you need the smallest apples. The variety is called Ranetki, but there are also analogues. I use regular white sugar, but you can also use cane sugar - it will give the finished jam a caramel aroma, or coconut sugar - it will give a corresponding coconut aroma.

    Wash the apples, leave the leaves and twigs - with them the vaenya will be more beautiful and original. Pierce them in several places with a toothpick - this is done so that the skin does not burst during cooking and the apples remain intact.

    Cover the apples with half the sugar and leave for several hours to release the juice; you can leave it overnight. Apples are not berries, so don't expect a lot of juice.

    Pour the rest of the sugar with water and dissolve it. (you can heat the syrup a little so that the sugar dissolves better).

    Pour the syrup into the apples and stir. Fans of spicy jam can now add some spices and seasonings to the berries. Cinnamon, vanilla, cloves, star anise - all this would be very appropriate in apple jam. You can take them as whole seasonings: in pods, sticks, buds and stars (but in this case, do not forget to remove them from the jam at the end of cooking), you can also use ground spices - a pinch of each will be enough.

    Bring the mixture to a boil and cook over low heat, constantly skimming off the foam, for about 40 minutes. For cooking, I recommend using a thick-bottomed container - the jam will not burn in such a container.

    Sterilize the jars in any convenient way. I pour a little water into each jar and put it in the microwave for 5-7 minutes. But you can sterilize the jars in the oven at 100 degrees for about 30 minutes, or simply scald them or hold them over steam. Boil the lids for 5 minutes. Place the finished jam in the jars (you can put it directly hot or let the jam cool), tightly Cover the jars with lids or roll them up.

This is excellent jam. I once made this too. It’s just been a long time since I’ve seen apples of paradise anywhere, which is a pity.

This year I saw these apples at a friend’s garden. I liked them so much, they hung so beautifully, just like cherries. I collected them and made compote and jam. It’s a pity I didn’t know Khrumka yet. The jam turned out sour and dark, but your color very beautiful

And for a long time afterwards it seemed to me that the culinary recipe for this jam should be somehow special.
