Dried mushrooms will be the most flavorful. They need to be poured with boiling water and left to stand for 20-30 minutes. Then rinse well and chop finely.

    To prepare pancake dough, mix eggs with sugar and salt.

    Add milk and vegetable oil. Add flour and mix it into the dough. At this stage the dough will be thick.

    Pour in boiling water to brew the flour. Thanks to this, the pancake dough will become more elastic, which means the pancakes will tear less.

    You may need a little less or more flour. Adjust the thickness of the dough. It should be quite liquid. It is the liquid dough that will make thin pancakes.

    Grease a hot pancake pan with oil and pour in some batter.

    Bake pancakes. Stack them on top of each other and cover with a lid to prevent them from drying out.

I made pancakes with potatoes and mushrooms using this recipe. I boiled the potatoes and mashed them. I took frozen mushrooms. I fried them without onions and added them to the puree. I made the dough according to the recipe, let it sit for 30 minutes and started baking pancakes. As the author advised, I covered the pancakes with a lid so that they did not dry out. I put the filling on the finished pancakes and folded them into rolls. I fried it in a frying pan until crispy. The pancakes disappeared from the plate very quickly.
