Pancakes on whipped egg whites with soda and vinegar

Delicious homemade pancakes according to grandma's recipe! It was my grandmother who taught me how to bake these pancakes. This recipe has been passed down in our family from generation to generation. I have prepared pancakes according to other recipes, but the taste of virginity has always remained my favorite.

    Prepare all ingredients. To prepare pancakes, take premium flour, C1 category eggs, cow's milk of any fat content and the rest of the ingredients according to the list.

    Take 2 large mixing bowls. Break the eggs by separating the egg whites from the yolks. Place the container with the whites in the refrigerator to cool. This will allow the whites to whip up better. Leave the container with the yolks for work.

    Add sugar and salt to the yolks and use a wooden spoon to mash the egg mixture.

    Pour in the cow's milk and sift most of the flour into a container. There is no need to add all the flour at once, as not all the flour may be needed. It all depends on the category of eggs chosen, the fat content of the milk and the quality of the wheat flour itself. Beat all ingredients with a mixer. If there is not enough flour, add more and beat again.

    Place a piece of butter in a saucepan and melt it over low heat. Under no circumstances should you bring butter to a boil.

    Pour the melted butter into the container with the dough, also add slaked soda with vinegar and beat all the ingredients again using a mixer.

    Remove the container with the chilled egg whites from the refrigerator and beat them well into a strong foam. Whipped whites should hold their shape well.

    Carefully transfer the fluffy white mass into the bowl with the dough and a spatula, using bottom-up movements, gently mix the mass.

    Heat up the frying pan by greasing it with butter. Using a ladle, pour the pancake batter into the heated frying pan and, using a circular motion of the pan, spread the batter over the entire bottom of the frying pan. When the pancake is baked on one side, turn it over and bake it on the other side until a nice crust forms. Continue baking pancakes in the same way, but without greasing the pan with butter.
