I cooked smelt baked in the oven for dinner. It's really simple to prepare and not at all troublesome. I did not remove the heads. The spices I used were salt, ground pepper and dry Provençal herbs. I baked the fish at 200 degrees for 30 minutes. I didn’t have much foil left, so I just covered the fish with it and lined the baking sheet with parchment. The smelt turned out tender, juicy, very tasty and aromatic. Served with fried potatoes. Thank you very much for the recipe!
