Orange Pie

Delicate, soft cake with a rich orange aroma. The cake turns out incredibly tender and weightless, like a cloud. Chocolate glaze goes well with orange and emphasizes the taste and aroma of the pie.

  1. STEP 1

    STEP 1

I started preparing the pie by separating the whites from the yolks. Then I grated the orange zest on a fine grater. Mixed the yolks with brown sugar (150 g), freshly squeezed orange juice 260 ml (about 4 oranges), vanilla sugar, zest and odorless vegetable oil and beat thoroughly until smooth. Then sift flour and baking powder into the resulting mixture and mix until smooth.

In a separate container, beat the egg whites with a pinch of salt until an airy dense mass is obtained, gradually added white sugar and beat until the granulated sugar dissolves.

  3. STEP 3

    STEP 3

Add about a third of the protein mixture to the orange dough and mix until smooth. Then added the remaining whites and gently mixed until smooth. Pour the resulting dough into the prepared baking pan, greased with oil. I did not cover the pan with parchment; I have a non-stick pan. Stir lightly to release any stray air bubbles.

Placed the pan in the oven, preheated to 180°, and baked for about 40-45 minutes. But everyone’s oven is different, so you need to focus on your own. I checked the readiness of the pie with a wooden skewer; when it came out dry and clean, the pie was ready. Melted 72% dark chocolate in the microwave and poured over the cooled cake. Topped with orange slices and rosemary sprigs.
