STEP 1

Wash the eggs in warm water and soda, as there may be harmful bacteria on their surface. Break them into a deep bowl and pour in the milk, salt and pepper. Stir with a whisk or fork until smooth.

There is no need to beat vigorously so that there are no bubbles on the surface. You just need to achieve uniformity.
STEP 4

Heat vegetable oil in a frying pan. Add bacon. If yours is oily, you can either not use oil at all or reduce the amount. Fry on both sides until golden brown, about 2 minutes on each side.

Pour the egg and milk mixture into the bacon. Fry the omelette over low heat, covered, for about 8 minutes.
STEP 6

Transfer the finished omelette to a plate. Sprinkle with any fresh chopped herbs and serve. Bon appetit!
