Olivier salad is my family's favorite. I also prepare a version with chicken, but without mayonnaise, but with natural yogurt. It won't be as high in calories.

I made Olivier salad with chicken and cucumber according to this recipe. I love this salad, but I often cook it with boiled sausage. I took out a jar of homemade canned cucumbers and opened canned green peas. I boiled chicken fillet (I made soup from the broth), vegetables and eggs. Cooled and cleaned. I cut all the products into small cubes. Mixed it in a salad bowl, seasoned with mayonnaise and a little pepper. An excellent salad came out in large quantities. The cucumbers have a nice crunch, the vegetables are soft, and the chicken is tender. All ingredients complement each other perfectly. Delicious salad. The chicken fit perfectly into our usual salad. Very tasty and filling. Olivier with chicken is not at all dry, as I thought before, but on the contrary quite juicy with mayonnaise. Great recipe! I will cook it again and recommend it to everyone. I made Olivier salad with chicken and cucumber for dinner. The only thing I didn't have on the grocery list was green peas. The rest were at hand. All that remained was to cook the meat, potatoes, carrots and eggs. Then clean and cut everything. Which is what I did. Needless to say, the salad turned out very tasty!
