    How to cook nettle soup? Prepare your food. Pour vegetable oil into the bottom of the pan in which the soup will be cooked. The oil can be anything, the main thing is that it does not have a strong aroma. You can use melted butter, then the taste of the finished soup will have a slight creamy note. Place carrots, peeled and grated on a coarse grater, into the heated oil. Fry the chopped carrots until soft, stirring occasionally with a spatula.

    Take young nettles for soup or use only the tops of older nettles. These greens are more delicate in texture and taste. The stems are often too hard and tough. Pour boiling water over the nettle greens, then chop them finely.

    Wash the potatoes, peel and cut into small pieces of equal size. Place it in the pan with the carrots and fry the vegetables all together for a little while. You can add some spices to taste, for example, ground black pepper, turmeric, curry, ground paprika. Fry the spices along with the vegetables.

    Pour boiling water over the vegetables, add the required amount of rice, add salt. You can add a small amount of bay pepper and allspice. Bring the contents of the pan to a boil and cook for about 20 minutes. Be guided by your stove.

    At the end of cooking, add chopped nettle, simmer for a few more minutes and remove the nettle soup from the heat. If desired, add chopped fresh herbs to the finished soup. Serve the finished nettle soup hot. When serving, the soup can be supplemented with fresh sour cream or mayonnaise.

I was extremely curious what nettle soup tastes like! I prepared it mainly for my husband, because the soup is lean and generally dietary. It was easy and enjoyable to cook. I took the quantity of ingredients according to the recipe to check the consistency of the soup. Everything turned out great! The soup turned out clear, beautiful, bright. I took more greens. In addition to young nettles, I added parsley, dill, green onions and wild garlic. I doused the nettle with boiling water first and worked with gloves so that this useful herb would not burn. The soup is delicious, we liked it. I added sour cream to my plate. The nettle in the soup feels like ordinary greens; it is soft and pleasant in consistency. By the way, it gives a pleasant greenish color to the broth. In general, the soup turned out to be aromatic due to the large amount of greens. Now I will cook this soup along with others.
