STEP 1
How to make mushroom caviar from honey mushrooms for the winter? Prepare all ingredients according to the list. When purchasing mushrooms in a store or picking them yourself, you need to be completely sure that these are really honey mushrooms and not false mushrooms. Rinse honey mushrooms thoroughly, remove debris and leaves. For caviar, you can use mushrooms of any size, caps or legs, or both, then the legs need to be trimmed, leaving a length of no more than two to three centimeters.
STEP 2
Place the mushrooms in an enamel pan and boil in salted water for 40 minutes from the moment it boils. Caviar can be made not only from fresh, but also frozen and even pickled mushrooms. Therefore, if you suddenly want mushroom caviar, but there are no fresh mushrooms on hand, you can use any available ones.
STEP 3
Drain the water from the pan, place the honey mushrooms in a colander so that the broth drains completely. Let them cool slightly and grind them using a blender or pass through a meat grinder. If you want the caviar to be more grainy and crunchy, then it is better to use a meat grinder; in a blender, the mushroom mass turns out to be more uniform in consistency.
STEP 4
Wash the carrots in running water with a brush, peel and grate on a medium grater. Peel the onions and finely chop with a knife. Pour vegetable oil into the frying pan. Turn on the fire.
STEP 5
Place onions and carrots in heated oil, fry the vegetable mixture until the carrots are soft and the onions are transparent over medium heat, about 7 minutes. Then add the mushroom mixture to the frying pan with the vegetables. Add salt and ground black pepper, stir.
STEP 6
Fry mushroom caviar with carrots and onions over low heat for about 30 minutes, stirring so that the mushrooms do not burn to the bottom of the pan. Then add table vinegar, stir the mass, keep on fire for about 5 minutes. Turn off the heat. Sterilize jars in advance. To do this, wash them with baking soda and place them in a cold oven upside down. Turn on the oven to 150 degrees and sterilize 0.5 liter jars for 10 minutes, 1 liter jars for 15 minutes. Wash the lids and boil.
STEP 7
Place honey mushroom caviar in sterilized jars and cover with sterile lids. Since we added vinegar to the caviar, this product does not require additional sterilization. After cooling, store the most delicious honey mushroom caviar at home in a cool place. Bon appetit!
