Mushroom caviar from dried mushrooms

Step-by-step preparation
STEP 1
We prepare all the necessary ingredients for preparing mushroom caviar from dry mushrooms. It is better to use forest dried mushrooms, collected in the forest and dried yourself, rather than purchased ones. These mushrooms will make the caviar more flavorful. For example, you can use Provençal herbs as spices, but you don’t need to overpower mushroom caviar with bright, sharp seasonings. First of all, the taste of the mushrooms themselves should be good.
STEP 2
We wash the dried mushrooms under running water to remove all the sand, then fill the washed mushrooms with clean water. Let the mushrooms soak for at least a couple of hours.
STEP 3
After the specified time, drain the water from the mushrooms, fill the pan with new clean water and put the pan on the fire. Cook the mushrooms in a small amount of water over medium heat for about one hour. Then pour the broth into a separate container. You won’t need it to make caviar, but you can use it to make a flavorful sauce or a small soup.
STEP 4
Peel the onions, rinse under water and cut into large half rings. Transfer it to a frying pan, add salt and lightly fry in vegetable oil until transparent. At the end of cooking, add spices and stir.
STEP 5
Place the boiled mushrooms and fried onions together with the vegetable oil in which they were fried in a blender and grind until smooth. If you don’t have a blender, the onion-mushroom mass can be passed through a meat grinder, but it is better to use a grid with more frequent and small holes.
STEP 6
Mushroom caviar from dried mushrooms is ready. If necessary, add mushroom caviar to your taste, let it cool, then transfer it to a bowl or some small container and serve.
