STEP 1

How to bake pies with minced meat in the oven using yeast dough? Prepare the necessary ingredients for the dough. Remove the eggs from the refrigerator in advance. Heat the kefir a little until it becomes slightly warm. Instead of kefir, you can use milk. Sift the flour through a sieve to saturate it with oxygen. This will make the dough fluffier and airier. Melt the butter first in a microwave oven or in a water bath and cool to room temperature.
STEP 2

In a small bowl, combine some warm kefir, yeast, sugar and a little flour. Mix everything and leave to stand for 10-15 minutes to start the yeast fermentation process. Air bubbles will begin to actively appear on the surface. This part is called dough. If fermentation has not started, then it means the yeast is not working, you will have to replace it.
STEP 3

Pour the dough into the bowl for preparing the dough. Add the remaining kefir, salt, eggs and melted butter to it. Stir.

Gradually add flour and knead the dough.
STEP 5

Depending on the quality of flour, it may take more or less. Be guided by the consistency of the kneaded dough. It will almost stop sticking to your hands. Cover the bowl with the dough with a towel and let it stand in a warm place for an hour for the dough to rise.
STEP 6

While the dough is rising, prepare the filling. Minced meat can be taken from any type of meat. I will use minced pork. You can buy it ready-made or cook it yourself by grinding the meat through a meat grinder.
STEP 7

Add finely chopped onion and egg to the minced meat. Add a little salt and spices to taste. Mix the filling well so that the ingredients are evenly distributed among each other.
STEP 8

After standing, the dough began to rise well. You can start working with it. Turn on the oven to 180 degrees in advance.
STEP 9

Divide the dough into 2-3 parts and cut each part into small pieces. Be guided by what size pies you want to get.
STEP 10

Mash a piece of dough into a flat cake. You don't even have to use a rolling pin for this. You can knead it simply with your hands. Place some meat filling in the center, pinch the edges and form a pie. Make the rest of the pies in the same way.
STEP 11

Place the pies on a baking tray lined with parchment paper. You can choose the right parchment by reading a separate article about the features of parchment, the link is at the end of the recipe. Cover the pies with a towel and let them stand for 10 minutes so that they rise a little.
STEP 12

Before putting the baking sheet in the oven, brush the pies with egg yolk and sprinkle a little sesame seeds. Place the baking sheet in the oven, preheated to 180 degrees, for 25-35 minutes. The finished pies will rise slightly and become golden brown. Cool them slightly and serve.
