STEP 1

Prepare the necessary products.
STEP 2

Very carefully separate the whites from the yolks. Pour the whites into a bowl, you can add a pinch of salt and beat first until a light airy mass is obtained.
STEP 3

Gradually add sugar to the whites in 2-3 additions and beat until stable peaks form and the sugar is completely dissolved. When stable peaks are reached, add lemon juice. Add cornstarch and cinnamon and stir.
STEP 4

Divide the resulting protein mass into approximately two equal parts. Place half of the protein mass on the parchment and level it to form a circle with a diameter of 20 cm. Carefully make a smooth surface.
STEP 5

Also lay out the second half of the protein mass, but form it into small peaks.
STEP 6

Place the whipped whites to dry in an oven preheated to 150 degrees for 1 hour.
STEP 7

After drying, allow the cakes to cool completely.
STEP 8

While the cakes are cooling, prepare the cream. Pour the cooled heavy cream into a cold container and beat until creamy.
STEP 9

Separate the cooled cakes from the parchment. Spread some of the whipped cream onto a smooth crust and add some berries.
STEP 10

Cover the top with the peaked cake.
STEP 11

Place whipped cream and berries in the middle of the top crust. Sprinkle the berries with powdered sugar.
STEP 12
