Step-by-step preparation
STEP 1
How to make Georgian-style mchadi from corn flour in a frying pan? Prepare all the necessary products. Try to find the finest flour, this kind of cake will be better fried and will not be tough. The amount of water indicated is approximate, check the consistency of the dough. You may need more or less of it. No salt is added to traditional flatbreads.
STEP 2
Sift the flour. Do not skip this step; sifting the flour makes the baked goods more airy, and also eliminates large lumps or excess impurities from the flour, which is especially important for corn flour. The sieve shows how much has not been sifted out.
STEP 3
Gradually start pouring water into the flour, kneading the dough. At the same time, actively stir it with a fork or spoon. When the dough is still a little dry, start kneading with your hands. This way you will better feel its consistency. The dough should not be liquid and spread, it should easily gather into a lump and not fall apart. The dough is not sticky at all and is very pleasant to work with.
STEP 4
Using your hands, form the mchadi in the form of small oblong cakes, as you would do if you were making cutlets, only in a flattened shape. The thickness of the cakes should be no more than 1 cm, otherwise they will not bake. I cooked half the portion, I got 5 pieces.
STEP 5
Heat the pan well, otherwise the tortillas may stick. I took a non-stick frying pan, it has a thick bottom and bakes well. A cast iron skillet will also work. Place the tortillas on a hot frying pan. STEP 6
Cover the pan with a lid and turn the heat to below medium. Bake the cakes on one side for 5-7 minutes.
STEP 7
Carefully turn the mchadi over to the other side with a spatula. At the same time, lightly press the top of the cake to flatten it. Cover the pan again with a lid and bake for the same amount of time.
STEP 8
Remove the finished mchadi from the pan and serve immediately.
