It is better to do this gradually, in the refrigerator, so that it does not fall apart when cutting. Clean and gut the mackerel carcass, carefully removing all the insides and black film. Take filtered or bottled water.

    Pour water into a saucepan, add salt, sugar, bay leaf and pepper. Place the pan on the fire and bring the water to a boil. Boil for a couple of minutes, then remove the pan from the heat and leave to cool completely.

For salting fish, a mackerel marinade recipe came in handy. On the author’s advice, I replaced table vinegar with homemade apple cider vinegar, and also added chopped onions to the jar with pieces of mackerel. The recipe is great!!!
