Madeleine flower cookies with blue tea and almond flour
Ingredients
Step-by-step preparation
STEP 1
Prepare the starting products. Prepare your whisk.
STEP 2
Grind sugar and clitoria flowers (blue tea) in a coffee grinder.
STEP 3
Break eggs into a bowl. Don't forget to wash them first!
STEP 4
Beat the eggs with a whisk. If necessary, heat honey in the microwave.
STEP 5
Pour honey into the eggs and add powdered clitoria with sugar. Stir with a whisk.
STEP 6
Prepare all dry ingredients: flour, starch, baking powder, almond flour, salt. Sift everything through a large sieve.

Combine the dry ingredients into a single mixture using a whisk.
STEP 8
In 2-3 stages, add the flour mixture to the egg mixture. Mix well with a whisk.

Melt the butter in the microwave. Add the oil in 2-3 stages. Stir with a whisk.
STEP 10
Fold the cream into the dough. Don't forget to preheat the cream if it was from the refrigerator.

The dough will turn out liquid at first, but this should not bother you, because wheat flour contains gluten!))

Cover with film and leave for at least 2-3 hours, preferably overnight.

After the gluten has “worked” and the dough has “rested” and swelled, you can continue. As soon as you decide to bake, turn on the oven.))

Stir the mixture with a spatula and transfer to a pastry bag.
STEP 15
Pour the dough into a silicone mold; no need to grease it first. Don't be greedy and fill the cells to the brim! It is better to plant 3/4.
STEP 16
Bake in a preheated oven at 230 degrees Celsius, first for 5 minutes, then reduce the gas to 180 degrees and bake for another 10 minutes.
STEP 17
You should get these “papillae”, “titties”, bumps, mounds, humps... It is these bulges that make madeleines Madeleines!
STEP 18
Place on a wire rack and cool. You can sprinkle it with powder, you can cover it with glaze, or you can skip the steaming and slam it right away.
