Step-by-step preparation
STEP 1

STEP 2
Gut the mackerel, be sure to remove the black film inside. If you bake it with the head on, remove the gills and fins. Wash the carcass and dry with a paper towel. Cut into pieces.
STEP 3
Peel the onion and cut into rings.
STEP 4
Place the mackerel into a mold. I didn't use any oil, but you can grease the bottom of the pan with a little vegetable oil. You can also line the pan with foil.
STEP 5
Place onion rings between the fish pieces.
STEP 6
Wash the tomatoes in running water and cut into slices. Choose dense fruits that hold their shape well.
STEP 7
Place the tomatoes between the fish and onions, alternating them. Salt, season with spices and sprinkle with lemon juice. Bake the mackerel in an oven preheated to 180 degrees for about half an hour. STEP 8
When serving, garnish the dish with herbs and lemon. Bon appetit!
