    How to make mackerel in tea and onion skins at home? Prepare your food. For a given amount of brine, either one or two mackerel will do. I prepared two. First remove the fish from the freezer, but do not defrost it completely - slightly frozen mackerel will be easier to cut.     First of all, brew some tea. Both loose and tea bags are suitable. Pour boiling water over the tea leaves, you will need 250 ml. Stir and leave for 10 minutes.

    Pour the remaining water (1 liter) into a saucepan and put on fire. Pour two large handfuls of clean onion skins into it. Stir. After boiling, boil it for 15 minutes. Then strain the broth and return to the saucepan.

    Add tea, salt, sugar and all the spices to the onion broth. Bring the brine to a boil, turn off the heat and let cool completely.

    Cut the mackerel. Cut off the head, tail and fins. Cut the belly and remove the entrails. Be sure to remove the black film, as it may taste bitter. Rinse and dry the carcasses outside and inside.

    Place the fish in a container and fill with cooled brine. Leave it to stand on the counter at room temperature for 8 hours. Then cover with a lid and refrigerate for 3 days. Turn the fish onto the other side twice a day so that it is colored and salted evenly.

    Remove the finished fish from the brine, dry with paper towels and cut into pieces. Serve mackerel in tea leaves and onion skins to the table. Bon appetit!
