STEP 1

How to bake fluffy sweet buns in the oven? Prepare the necessary ingredients.
STEP 2

Warm the milk a little. Pour yeast and 1 teaspoon of sugar with half the warm milk, stir and leave in a warm place to activate the yeast for 10-15 minutes. A small foam cap should appear on the surface.

Melt the butter in a water bath or in the microwave and let it cool slightly.
STEP 4

Beat eggs with sugar and salt until smooth.
STEP 5

Pour melted butter into the eggs and stir.
STEP 6

Add the remaining milk to the butter-egg mixture and mix again.
STEP 7

Pour the activated yeast into the bowl and mix everything well again.

Sift the flour twice so that it is enriched with oxygen and the dough rises better. Gradually add flour to the resulting liquid mixture. First, you can safely add a little more than half and mix with a spoon. Then add the rest of the flour in small portions, stirring each time. You may need a little less or more flour. But the main thing is not to overdo it with its addition, so that the dough does not turn out too steep and heavy.
STEP 9

The dough turns out soft, smooth, homogeneous. Cover it with a towel and leave it in a warm place to rise for 1-1.5 hours.

After the specified time, the dough will rise well and increase in volume by about 2.5 times.
STEP 11

Punch down the dough and place it on a table sprinkled with flour. Divide the dough into equal parts, the number of which will depend on the desired size of the buns. I divided it into 12 parts.

Roll each piece of dough into a log. Cover the buns with a towel to prevent them from winding up. Turn on the oven to 180 degrees in advance.

On a floured surface, roll each piece of dough into an oval shape.
STEP 14

Brush the flatbread with soft butter and sprinkle sugar on top.
STEP 15

Make frequent cuts along the length of the cake, without cutting all the way through.
STEP 16

Roll the dough into a log diagonally.
STEP 17

Wrap the roll in the shape of a snail.
STEP 18

Tuck the end of the roll down the bun, pressing lightly so that the dough does not unfold during baking.
STEP 19

Form all the buns in this way and place them on a greased baking sheet. Let the buns rest for 10-15 minutes.
STEP 20

Beat the yolk with milk. Milk can be replaced with sour cream.
STEP 21

Brush the tops of the buns with a mixture of yolk and milk (sour cream) using a pastry brush.
STEP 22

Bake fluffy yeast dough buns in an oven preheated to 180 degrees for 20-25 minutes until golden brown. The exact time depends on your oven. Let the buns cool and serve them. Enjoy your tea!
