From the specified number of ingredients I got a thick soup. If you like thinner soups, then reduce the amount of barley and potatoes or increase the amount of water.

    Rinse the pearl barley several times until the water is clear. Next, you can soak the cereal, or immediately begin further preparation (in this case, you need to boil the cereal a little longer than indicated in the recipe). Fill the pearl barley with cold water and leave it this way for 30-40 minutes.

    During this time, move on to other products. Peel the onions, carrots and garlic. Rinse everything together with the tomatoes in cold water and dry. You can peel the tomato if you wish; I usually don’t do this. Cut the carrots into small cubes or strips, chop the onion and garlic as finely as possible. Chop the tomato in any way convenient for you (slices, cubes, etc.).

    Heat a small amount of vegetable oil in a thick-bottomed frying pan. Send the onions and carrots to fry.

    After 1-2 minutes, add the tomato and garlic to the frying. Stirring, leave in the pan for another 3-5 minutes.

    Place the barley in a saucepan, add a small amount of water and boil until half cooked. This will take you 20-25 minutes. Drain off the remaining water.

I wanted to cook a light soup not with meat broth, but with water. I liked the recipe for Lenten pickle on the website with pearl barley and pickled cucumbers. It wasn’t difficult to cook such a pickle, and it didn’t take much active time to prepare. I had all the necessary ingredients. I cut the carrots and potatoes with a curly knife to make the soup look even more elegant. My daughter doesn’t like pieces of tomatoes in ready-made food, so I added coarsely grated tomato. The pearl barley was pre-soaked for about 40 minutes, after which it was boiled for half an hour. The only spices I added were salt, bay leaf and black pepper. I used homemade pickles. In addition to the cucumbers themselves, I also added brine to the soup. The pickle turned out very appetizing and aromatic! It has a very bright and rich taste, despite the fact that it was boiled in water. My soup turned out to be medium thick because I cooked it in 2 liters of water. For my dad, I cooked a Lenten pickle with barley and pickles. It differs from the usual one only in the absence of meat. But even on water, the pickle turned out tasty and aromatic! I soaked the barley in advance for about 3 hours. Then washed and boiled until tender. I combined the chopped potatoes with pearl barley and continued to cook until the potatoes were ready. Fry onions, garlic and carrots until golden brown and have an appetizing aroma. The tomatoes were frozen, so I added them straight into the pan, otherwise they would have turned into mush. I have homemade pickled cucumbers, I decided to cut them into quarters for variety. Boiled everything together for about 10 minutes on low heat and let it brew for a little while, covered. The soup came out rich and delicious! Thanks for the recipe!

Thank you! This is just the right diet for me))) Excellent lean pickle, aromatic, sour, I really loved it. Sometimes I put rice instead of pearl barley, and it doesn’t turn out too bad either.
