Wash and dry mint leaves. Place mint leaves along with sugar in a blender bowl and grind. If you want to make this cake in winter, you can add 3 teaspoons of dried mint instead of fresh mint, but the taste will be completely different. Transfer the sugar mint to a deeper bowl and add vegetable oil, the zest of a whole lime, the juice of half a lime and a glass of sparkling water. For this recipe, it is better to take highly carbonated water, then the cake will rise
STEP 3
Mix everything thoroughly and start with the dry ingredients. Sift flour and baking powder into a separate bowl. Combine the dry and liquid ingredients and mix, the dough should look like pancakes. Lightly grease the baking dish with vegetable oil and pour the dough into it. Place the mold in an oven preheated to 180 degrees for 40-45 minutes. Check the readiness of the cake with a match or toothpick.
STEP 4
Let the finished cake cool and prepare the lime glaze. To do this, add the juice of the second half of the lime to the powdered sugar in portions and mix. Do not add all the lime at once, a few drops at a time, otherwise the glaze may become too liquid; sometimes the juice of not half, but a quarter of the lime is enough. Rub thoroughly with a spoon, and when the mass becomes homogeneous, opaque and white, the glaze is ready.
STEP 5
Spread the lime glaze on top of the cooled cake and serve.
