    Wash and dry mint leaves. Place mint leaves along with sugar in a blender bowl and grind. If you want to make this cake in winter, you can add 3 teaspoons of dried mint instead of fresh mint, but the taste will be completely different. Transfer the sugar mint to a deeper bowl and add vegetable oil, the zest of a whole lime, the juice of half a lime and a glass of sparkling water. For this recipe, it is better to take highly carbonated water, then the cake will rise

    Mix everything thoroughly and start with the dry ingredients. Sift flour and baking powder into a separate bowl. Combine the dry and liquid ingredients and mix, the dough should look like pancakes. Lightly grease the baking dish with vegetable oil and pour the dough into it. Place the mold in an oven preheated to 180 degrees for 40-45 minutes. Check the readiness of the cake with a match or toothpick.
