STEP 1

How to make lemon filling for pies? Prepare the necessary ingredients indicated in the recipe. Choose lemons that are undamaged, fully ripe and aromatic. Rinse them well under running water using a stiff brush. Pour boiling water over them and keep in hot water for about 1 minute. Thanks to this, the lemon zest will lose its bitterness, will be more aromatic and the lemons will be easier to wash. Dry them with paper towels to remove excess moisture.
STEP 2

Cut the lemons into arbitrary pieces. The shape and size of the cuts do not matter, since they will later be crushed into puree. Carefully remove every single bone! Since lemons are crushed very finely, even one small seed can ruin the entire portion of the filling. Therefore, take this important stage seriously.
STEP 3

Place the sliced lemons in a blender jar. If you don't have a blender, you can grind the fruit in a meat grinder. Add granulated sugar and grind everything into a homogeneous puree. Add cornstarch and stir until the cornstarch is thoroughly dissolved. Instead of corn starch, it is permissible to use the usual potato starch. Starch is needed to prevent the filling from spreading and burning. Leave the filling for 30 minutes until all the sugar has dissolved.
