Lecho with carrots, peppers and tomatoes

STEP 1

Prepare the indicated ingredients. I cook for two servings. For a larger number of servings, the quantity of products must be increased proportionally.
STEP 2

Peel the onions and carrots. Cut the onion into half rings. Cut the carrots into large strips.
STEP 3

Wash the bell pepper, cut off the stalk, remove seeds and chop. Wash the tomatoes, remove the stalk and chop.
STEP 4

Heat vegetable oil in a thick-bottomed saucepan and add chopped onion. When it becomes transparent, add carrots. Fry everything together for about five minutes.
STEP 5

After five minutes, add chopped bell peppers and tomatoes to the onions and carrots. Add salt and pepper to taste. Everything should boil together for about 15-20 minutes.
STEP 6

Serve the finished lecho hot or cold. At this stage you can wrap it in jars for the winter.
