Large Estonian cinnamon sugar braid

To prepare Estonian-style braided pastries, we prepare the necessary products with spices.
STEP 2
Pour one hundred and twenty milliliters of milk at room temperature into a mug and add two tablespoons of sugar.
STEP 3
Pour two teaspoons of dry instant yeast into a mug.
STEP 4
Mix all the ingredients in a mug with a whisk and leave until the yeast activates for fifteen to twenty minutes.
STEP 5
Place two egg yolks in a suitable bowl.
STEP 6
Place thirty grams of butter at room temperature in a bowl.
STEP 7
Pour a quarter teaspoon of salt into a bowl and stir.
STEP 8
Pour the activated yeast from the mug into the bowl with the egg mixture.
STEP 9
Mix all ingredients in a bowl until smooth.
STEP 10
Sift three hundred grams of flour into a bowl.
STEP 11
Mix the flour and liquid base well.
STEP 12
Knead and form the dough in a bowl with your hands into a lump.
STEP 13
Place the dough on a table sprinkled with a small amount of flour and knead it very well for about seven minutes.

Grease the dough with a small amount of vegetable oil.

Place the oiled dough into a bowl.

Cover the bowl with the dough with a towel and put it in a warm place for an hour and a half.

To prepare the aromatic filling, pour sixty grams of sugar, two teaspoons of cinnamon into a small bowl and mix.

Pour fifty grams of melted butter into a bowl, then pour the mixed sugar and cinnamon into it.

Mix all the ingredients well in a bowl.

After an hour and a half, pour a small amount of vegetable oil on the table and put the dough out of the bowl.

Knead the dough well, release carbon dioxide and make a flat cake.

Roll out the cake to approximately seven millimeters thick.

Spread the prepared aromatic filling onto the flatbread in an even thin layer, not all the way to the edges.

Reserve about one teaspoon of the sugar mixture to brush the braided loaf.

Carefully roll the flatbread with the filling into a tight roll.

Glue the edges and ends of the roll well.

Turn the roll seam side down and press it lightly to give it a flat shape.

Stepping back two centimeters from one edge of the roll, use a knife to make a longitudinal cut to the very end.

Spread the two ends of the roll apart.

It turns out to be a kind of puff braid.

Glue the end of the braid together and give it a rounded shape.

Place the braided loaf on a baking sheet to rest for twenty minutes.
