    How to cook kutya for Christmas? Prepare your food. Which wheat to choose for kutya? Buy refined wheat. It is more convenient and reliable to buy already processed wheat, packaged in bags, in the store. It is already steamed and ready for cooking. Wash the wheat 6-7 times. If the grain is unpolished, soak it overnight in cold water; it will become softer and cook faster.

    Steam the raisins and dry. Chop the nuts with a knife, fry in a dry frying pan (about 1-2 minutes), remove the husks by rubbing between your palms. Instead of walnuts, you can use almonds, hazelnuts, cashews, and peanuts.

    Place the washed grain in a saucepan with a thick bottom, fill with water (400 ml), place on medium heat, cover with a lid. When it boils, skim off the foam. After 10 minutes, add salt. Reduce heat to low and continue cooking until done. The grains should be soft and crumbly. If the water has evaporated and the cereal is not ready yet, add a little hot water. If the porridge is ready and there is still liquid left, cover the pan tightly so that the wheat steams.

    Rinse the poppy seed to remove dust and debris, place in a sieve, and let the liquid drain. Place in a saucepan, add water (70 ml), stir. Simmer for half an hour over low heat. When the water in the poppy seed has reduced and it becomes thick, add another 50 ml. Stir. The poppy seed should simmer slowly and should not be allowed to boil or gurgle. Now grind the finished poppy seed together with sugar in a mortar, blender, or grind 2-3 times through a meat grinder. You should get “milk of poppy seed”.

    Mix all ingredients in a bowl (wheat, poppy seeds, raisins, nuts), add natural honey to taste. If desired, you can pour in uzvar or boiled water. Serve the kutya warm.
