Step-by-step preparation
STEP 1
Let's prepare the ingredients for Korean pork. For meat, it is better to use tenderloin, lean cuts of meat, and always fresh and high-quality meat. We cut off the film, tendons and remaining fat from the meat.
STEP 2
Cut the pork flesh into small cubes or strips no more than two centimeters thick. It is better to cut the meat across the grain so that after frying it turns out soft and tender. We rinse the meat under running water and let the water drain completely, placing the meat in a colander. Place the pork in a deep bowl.
STEP 3
Let's prepare the marinade for the pork. The basis of the marinade for pork in Korean is soy sauce; it is salty, so the remaining spices, especially salt, should be added to it to taste, so as not to spoil the sauce by excessively adding spices. Pour soy sauce into a bowl. Add tomato sauce, sugar, salt to taste, ground red pepper, ground ginger, grated or finely chopped garlic, sesame oil and a handful of sesame seeds. Mix the ingredients.
STEP 4
Pour the prepared marinade over the pork. Stir until the meat is well saturated with the marinade and leave it to marinate for half an hour.
STEP 5
Meanwhile, prepare the onions. Peel the onion and cut it into feathers. If desired, you can use blue onions.
STEP 6
As a rule, Korean pork is cooked in a wok - a deep frying pan with a narrowed bottom. If you don’t have one, then a cauldron or an ordinary deep, thick-walled frying pan will do. Pour vegetable oil into the frying pan. Turn on the fire. Place the meat in hot oil. Fry it over high heat until golden brown.
STEP 7
Add cooked onions. Reduce the heat and fry the meat and onions under the lid for about 10 minutes over medium heat, periodically stirring the ingredients with a spatula.
STEP 8
The dish is ready. The meat should be soft and juicy, and there should be a small amount of sauce left on the bottom of the pan. Serve Korean pork to the table hot, sprinkled with sesame seeds and chopped fresh herbs, as a separate dish or with boiled rice and fresh vegetable salad. Bon appetit!
