    How to make heh from chicken in Korean? Prepare all the products according to the list indicated in the recipe. Pluck the chicken, remove the entrails, and singe the down as necessary. If you have a frozen carcass, then remove it from the freezer in advance and defrost it. I prefer to use red lettuce or shallots; these onions have a milder taste and are great for heh. You can use regular onions.

    Boil the chicken until done. You can cook the whole carcass and then cut it into pieces. I first cut the chicken into pieces, and only then cook it. I don’t use the back for cooking heh, but put it in the freezer so that I can later make chicken broth from it. So, cover the chicken with cold water and put it on the stove. After boiling, skim off the foam, add salt and cook over moderate heat until tender.

    Meanwhile, prepare the vegetables. Peel the onions and carrots. Cut the bell peppers in half, remove the seeds and core. If possible, use peppers of different colors, so the finished heh will look brighter and more appetizing. Rinse all vegetables and dry with paper towels.

    Grate the carrots on a grater for Korean salads. Cut the onion into thin feathers or half rings.

    Grind the bell peppers in a similar manner.

    Using a slotted spoon, remove cooked chicken pieces to a flat plate or tray. Leave to cool. From the remaining broth you can cook a rich soup.

    Heat vegetable oil in a frying pan. You can add an onion, cut in half, and fry it, so the oil will become more aromatic. Remove the onions from the oil.

    Place the chicken in a deep, large bowl. Add carrots.

    Next, add the bell pepper and finely chopped herbs to the bowl. Parsley, dill and/or cilantro are good greens.

    Mix everything thoroughly but gently. Try the vegetables, if something is missing, add to taste. You may need to add some salt or vinegar. The taste of heh should be richly sour, sweet and salty. Cover the bowl with a lid or wrap it in cling film and place it in the refrigerator to steep for several hours.

    The longer the chicken sits, the tastier it will become. I usually leave it on for 4-5 hours or overnight.

I was very interested in the recipe for Korean chicken heh with carrots and onions. I always made heh from raw fish, but here it is chicken. I decided not to cook the whole carcass, but to use only the breast. I cut the fillet into thin strips and boiled these ribbons in boiling water. Added bay leaf, salt and peppercorns to the water. By the way, the boiled pieces turn out more neat than if you cut a whole boiled breast. From vegetables I took more juicy, sweet carrots and red onions. There were no peppers, and I didn’t want to take frozen ones. From greens parsley and dill. For the dressing, I took everything according to the list, only added more salt and vinegar, focusing on my taste. The chicken heh turned out great! Lots of juicy vegetables, hearty chicken and delicious dressing! I served this appetizer on the table as a “mayonnaise-free” salad. PP lovers appreciated it). Thanks for the recipe!

I made this yesterday and it turned out sooo delicious. My husband didn’t even immediately understand that it wasn’t a fish until I said it myself. Very easy to prepare, it took me 30 minutes to do everything, plus a day to sit in the refrigerator. The meat itself turned out just right, it wasn’t “overcooked” and was very juicy.
